Concentrate and Deaeration Machines

Concentration and deaeration are common processes in liquid food production and are often used together. Concentration removes part of the water from the liquid, which raises the final solids content and reduces the product’s volume and weight, making storage and transportation easier. Deaeration removes dissolved gases, mainly oxygen, under vacuum; the lower pressure allows the liquid to release these gases at a lower temperature. Depending on the process, the product can be concentrated first and deaerated afterward, or deaeration can take place during concentration. Since concentration controls how much water remains in the product and deaeration removes dissolved oxygen, both processes affect the final concentration, flavor, color, stability, and shelf life.

    2. Falling Film Evaporator Falling film evaporators concentrate liquid products by removing part of their water at a relatively low temperature. The liquid enters from the top and spreads over the inside of the heat-exchange tubes as a thin film, then flows downward under gravity. Forced Circulation Evaporator Forced circulation evaporators use a circulation pump to move the product at high speed through the heating tubes, which is suitable for thick liquids and products that contain insoluble solids.
