When processing citrus fruits, controlling the separation of juice, peel, and other components is important because peel oil and bitter compounds such as limonin can affect the flavor and appearance of the final product. Our citrus processing lines use controlled extraction and separation processes to manage the interaction between juice, pulp, and peel components, reducing unwanted bitterness while maintaining the desired pulp characteristics. Once juice is extracted from the fruits, short-time pasteurization uses controlled heating for a short period to reduce microbial activity while maintaining the fresh flavor characteristics of citrus juice.
